Healthy Lunches

David’s eating habits drive me crazy. He doesn’t care if he only eats one meal a day. I keep trying to bring him over to my side of the fence where I eat small meals throughout the day. It’s not working. He eats lunch out almost workday, which is so unhealthy. Almost everything in restaurants and cafeterias has extra salt and sugar.

What is your favorite healthy lunchbox idea? Do you have any dinner recipes that taste great the next day for lunch? David is sick of me packing turkey sandwiches with carrots and apple slices. Or leftover chicken spaghetti with a side of cantelope. Or vegetarian chili. (Please note, I like all of the preceeding meals.)

Our chiropractor suggested David should limit his animal protein consumption to help with his inflammation. Got any good vegetarian lunch ideas? There is a refrigerator at work where he can store his lunch box, so keeping food cold isn’t a problem.

I’m a good cook! Really, I am. But David hates the healthy foods I love! Please, somebody help!

    If David is tired of sandwiches maybe he would eat a wrap now and then, they make great flavored tortilla like cheddar jalapeno or even whole wheat ones, which is our favorite lately. you can put just veggies and dressing in it or chicken/lunch meat and cheese. I also usually send cody with a 100 calorie pack of guacamole to put on his sandwich or wrap. yummy yum.

    Here are some things we eat:

    -quesadillas w/veggies and spinach, beans & rice on side
    -spaghetti with normal sauce (minus the meat, of course) pesto, veggies, and pine nuts
    -black bean burgers (you can make these really easily)
    -veggie sandwiches w/tomato, cucumbers, cheese, and hummus
    -a big salad w/lots of veggies and chickpeas for protein
    -twice baked potatoes w/spinach, or baked potatoes with veggie chili on top
    -stir fry

    I’ve got lots more ideas if you want them. : )

    Hey Ashley,

    Did the doc say ALL animal protein or just certain ones that are like high in fat or whatever? What about frittata? Can he eat eggs? It’s like quiche without the crust.

    When we have chicken, I try to have leftovers so I can make chicken salad the next day…you can use fat free mayo and celery for on bread, or you can do fat free may and red grapes and walnuts to eat plain.

    Wraps are a good idea too…the whole wheat ones have lots of flavor. Spinach lasagna? I’ve only had it once, but it was delicious! I’m sure you could find a recipe online…speaking of which, have you tried going on line? Just google vegatarian lunches or something. You’d be surprised how much you come up with!

    The chiro said white fish and eggs are okay. David will never give up red meat or chicken, but we are cutting back. I like quiche and frittata. David’s not a big fan.

    My mother-in-law makes an awesome chicken salad with grapes! That’s a great idea for leftovers! We do like whole wheat tortillas, and Amy, the guac idea is great. David loves guac. I’ll have to start doing wraps. Kasey, the quesadillas are a good idea. David loves Tex-Mex. I will have to try making black bean burgers. I made broccoli cheese stuffed spuds a few times. I like them a lot more than David.

    Isn’t it a pity that I’m not the one needing a special diet? The more I think about this situation, the more I think the real problem is just that David needs to learn to like more things!
