With David’s chronic illness, eating right is very important. Here’s a few things I do to help us eat healthy food fast.
I cut up fresh fruits like melons and veggies like carrots as soon as I get home from the grocery store and put them in single serving size containers or baggies. I also do this with almonds and walnuts (Hooray for Omega 3s!). I even slice tomatoes for sandwiches ahead of time. This saves me so much time when I’m packing lunches.
One trick that makes dinner prep faster is making a pot of brown rice while I’m cleaning house. Brown rice is better for you than white rice, but unfortunately, it takes about an hour to cook. If I go ahead and make it before I need it, I have a healthy side dish ready to go with any main dish. Just remember that it’s important to treat cooked rice like you would any perishable food. It must be refrigerated properly.
I love the microwave steamer my mother gave me for my birthday two years ago. I use it for broccoli and asparagus all the time. It’s so fast! You can get them at Wal-Mart or Target for around $10.

P.S. This is really more of a savings tip, but the Kroger Brand of 94% Fat Free Popcorn tastes just as good as the name brand and it costs so much less!









Hey- good ideas! I don’t know if y’all like salmon (some people hate it!) but it’s soooo good for you! I buy a couple of filets and put lemon pepper on the top, bake it for 25 minutes on 350… it’s yummy, healthy and quick… if not the most inexpensive thing…. Anne, we’re not big on fish. I like tilapia once in awhile. David likes salmon once in awhile. I tried making fish once a week for us, but David wouldn’t go for it. Have you ever done the cedar plank salmon? I did eat some of that when my dad made it. Thanks for reading! Miss you, too!
