Progresso Giveaway!

Progresso Giveaway PackageHere’s what I made.

Chicken breasts coated in milk, then pesto, and then Panko. Baked in the oven at 400 degrees.

It was so delicious! I really do like the Panko better than regular bread crumbs. Panko is bigger and crunchier than bread crumbs. Panko would make a terrific unfried chicken.

With the broth, I made Progresso’s White Turkey Chili. It was really good.

Ingredients
2 Tablespoons vegetable oil
1 cup chopped onion
2 medium stalks celery, thinly sliced
(I added two cloves of minced garlic.)
4 Cups chopped or shredded cooked turkey
2 cans (11oz each) white shoepeg corn, undrained (I had a bag of frozen corn in the freezer. I used it instead.)
2 cans (15.5 oz each) great northern beans, drained (I soaked dried beans and put them in the slow cooker.)
1 can (4.5 oz) chopped green chiles (I used mild, but next time I’ll probably use hot.)
3 1/2 cups Progresso chicken broth (32 oz carton)
2 teaspoons ground cumin
1/4 teaspoon red pepper sauce, if desired (I left this out.)
1/2 cup shredded Monterey Jack cheese (2 oz)
1 Tablespoon chopped fresh parsley (Didn’t have any so I left this out.)

Directions
1. In a 5-quart Dutch oven or saucepan, heat oil over medium heat. Add onion and celery (I also added garlic.); cook 2 to 3 minutes, stirring occasionally, until vegetables are tender.
2. Stir in remaining ingredients except cheese and parsley. Cover; cook 15 to 20 minutes, stirring occasionally, until thoroughly heated.
3. To serve, ladle chili into bowls. Sprinkle with cheese and parsley. (I garnished with red pepper flakes.)

    I would probably make some kind of chicken strips with the panko. My husband and kids love nuggets and strips with BBQ sauce! With the broth I’d probably make some kind of soup. My oldest son loves my ham, spinach, tortellini, cannelini bean soup. I use chicken broth in that! It’s his favorite soup and he’s due home from college next week.

    OOh, I have never tried the panko as opposed to regular bread crumbs – they would make great baked chicken, like you said. With the broth, I would make some potato soup – especially now that it is getting colder!

    I used the broth to make chicken, broccoli, & rice casserole this week. Yum! I haven’t tried the panko either. I’d love to try it, and hubby & daughter love to eat foods that crunch! :)
